Summer Salmon Sandwich
There is nothing quite like a salmon sandwich on a hot summer afternoon. Combined with the cool crunchy slices of cucumber... is pretty close to perfect.INGREDIENTS:
- 1 can salmon - cleaned and flaked
- 1 large stalk celery, finely chopped
- several slices of cucumber
- 1 small green onion, finely chopped
- 1 tsp dried dill weed (optional)
- pinch of pepper
- salad dressing
PREPARATION:
Be especially careful to remove all of the bones and skin as this turns a lot of people off... including me. Prepare the salmon salad. I particularly like the taste of dill, but if this isn't one of your favorite herbs, cut back to pinch. Add salad dressing and you are done. Layer slices of buttered whole wheat bread with crunchy slices of cucumber and you are done.
