Swamp Salad
All salads do not have to be made with lettuce. Here is one that is popular at my house. I think that it was the name that helped to entice the kids to eat this salad. That it contained healthy ingredients didn't matter to them... but the fact that it was called a "Swamp Salad" certainly did!INGREDIENTS:
- 1 cup pineapple chunks in its own juice
- 1 Granny Smith Apple (diced)
- 1 cup celery (diced)
- 1 cup walnuts (chopped)
- pinch of salt
- 1/3 cup light mayonnaise or to taste
PREPARATION:
Drain the pineapple, saving 1/2 cup juice. Set aside. Toss apple chunks into a bowl with the juice and allow the juice to saturate the apple. This will help to prevent browning. After about 15 minutes, drain and add then add remaining ingredients to the apple chunks. Stir to combine all ingredients and then transfer to a bowl. Chill until serving time. Feel free to use whatever nuts that you happen to have on hand. While I prefer the walnuts, I have tried almonds and pecans and they work too. Be sure to date the recipe and add a comment along with any changes you might make to the recipe. This makes for great reading in the years to come and a guideline to follow for future reference.
