50's Style Potato Salad

Comfort Foods... Tip

What is summer without potato salad? As far back as I can remember, picnics by the lake always meant a great meal and... potato salad. Here's my Mom's recipe.

  • 6 potatoes, quartered and cooked in salted boiling water. Obviously, if the potatoes are large, you can cut them into smaller cubes.

  • 3/4 cup of salad dressing

  • 2 tablespoons of mustard

  • 3 spring onions (at least)
    chopped into small pieces

  • 2 hard boiled eggs, chopped

  • 1/4 cup of chopped dill pickles

Now all you have to do is combine everything and refrigerate. Store in the refrigerator until time to serve and that's it.

Obviously, in the fifties, potato salad was plain and simple and that might appeal to you, but today, we can toss in just about anything and still call it potato salad. If you have a favorite ingredient, feel free.

*Note... you probably already know this, but be sure to keep your potato salad cold, if you are taking it on a picnic. Food poisoning doesn't make the day very much fun.
